Cake#1

Frozen raspberries + a tiny bit of frozen blueberries + almond flour = Raspberry Sour Cream Coffee Cake

Whole wheat flour + millet + overripe bananas = Whole Wheat Millet Banana Bread

I didn’t taste this one, but was told the millet provided a really nice crunchy texture, similar to the crunch in Nestle Crunch bars.  that’s interesting 🙂

I realized that my pantry and cabinets were too full of stuff.  Instead of grocery shopping for more ingredients, I wanted to try to use up what I had already.  Cue Chopped~!  In case you’ve never heard of or seen Chopped, it’s a TV show where the challenge is to take a mystery basket of ingredients and turn them into a dish.

So here’s Chopped Part 1

I had way too many graham crackers..and a couple of apples…and some slivered almonds.  Seemed like it would make a fantastic apple pie with toasted almonds on top.

and it ended up turning into my first (minor) kitchen fire ever~!  Quite frightening, but all was ok..except for the pie.  Thank goodness we had a fire extinguisher.

Not all was a failure.  For the church kids Easter party, my station was “Resurrection Cupcakes.”  Cupcakes with green frosting and coconut “grass” and a marshmallow tomb with the stone rolled over, so the kids could remember that the tomb was empty and that Jesus had risen~!  So leftover green frosting + green coconut + a can of Dr. Pepper + flower sprinkles…
